Something Sweet, Something Healthy and A Smoothie - Recipes


So this is a long overdue post. I missed Friday's post and then this was supposed to go up on Monday but I was so ill last week and then have been busy! Sorry! To make up for it you've got two posts today! 


Something Healthy:

This is simple but delicious (and good for you)!

Tomato Soup: 

Ingredients: (makes about 3 lunch servings or 5/6 starters)
  • 500-600g ripe tomatos
  • Half an onion (peeled)
  • Half/a small carrot (peeled)
  • 1tbsp olive oil
  • Tomato puree
  • Pinch of sugar
  • 600ml hot vegetable stock
  • Salt and/or pepper (to season)
To Make:
  1. Wash tomatoes and cut into quarters, removing any hard cores.
  2. Chop the onion and carrot into small pieces.
  3. Pour 1tbsp of olive oil into a large pan and heat on a low heat until you can feel the heat from the oil.
  4. Tip in the onion and carrot, mix together.
  5. Cook vegetables on low heat until soft, about 10 minutes. Make sure to stir so they don't stick.
  6. Squirt in about 3/4tsp of tomato puree and stir.
  7. Add tomatoes, you can also add seasoning now, and stir.
  8. Let the mixture cook over a low heat for about 10 minutes (with the pan lid on), by the way, the onions may burn a bit but that's completely fine!
  9. Pour in the vegetable stock, stirring at the same time.
  10. Turn up the heat until everything is boiling then put the lid on the pan and turn it down.
  11. Cook for about 25 minutes, stirring occasionally.
  12. Remove pan from heat.
  13. With either a hand blender or a normal blender, blend the mixture until smooth and soup-like.
  14. Voila! Serve and enjoy!
This was lovely and light, perfect for lunch.

Something Sweet:

I used a recipe from Love Tanya by Tanya Burr (which I love, its great and so, so cute, I would absolutely recommend it)! Mine doesn't look as good as Tanya's, but why would it?

Lemon Drizzle Loaf:

Ingredients:

Cakes:
  • 3 eggs
  • 170g self raising flour
  • 170g caster sugar
  • 170g butter
  • 1tsp baking powder
  • Lemon zest from 2 lemons
Icing:
  • 150g icing sugar
  • Lemon juice from 2 lemons
To Make: (cake)
  1. Pre heat oven to 180c.
  2. Beat together eggs and sugar.
  3. Add lemon zest, baking powder and flour.
  4. Grease loaf tin and pour in mixture.
  5. Bake for 35-45 minutes (depending on your oven, always make sure to check)!
To Make: (icing)
  1. Mix together icing sugar and lemon juice.
  2. Stir until watery consistency.
  3. While cake is hot poke little holes all over the cake and pour the drizzle over it.
This cake was so nice, everyone in my house loved it!

A smoothie:

This smoothie doesn't look so good but it tastes good and does good.

The Kind-Of-Reminds-Me-Of-Summer Smoothie:

Ingredients:
  • Handful/couple of handfuls of spinach
  • 120ml coconut water
  • 120ml orange juice
  • 1 banana
  • 1 cup of mango
  • 1 cup of pineapple
To Make:
Blend everything together, starting with the liquids and spinach, and we're done!

Love this one, I put in too much coconut water and I don't love coconut water so it was a bit overpowering, definitely better to balance out with orange juice!
